Ingredients:
2 beets, peeled and diced
1 dried habanero pepper, crushed
4 cups beef stock
3 cups white cabbage, shredded
1 cup leeks; chopped
2 tablespoon olive oil
1 tablespoon cayenne pepper, finely minced
2 teaspoon red wine apple cider vinegar
1 teaspoon garlic, smashed
1 teaspoon salt
¼ teaspoon paprika
Greek yogurt for garnish
Directions:
Set your Foodi to Sear/Sauté, set to Medium High, and choose Start/Stop to preheat the pot. Warm the oil; stir in garlic and leeks and cook for 5 minutesuntil soft.
Mix in, stock, paprika, salt, peppers, vinegar, beets, white cabbage, cayenne pepper, and crushed red pepper.
Seal the pressure lid, choose Pressure, set to High, and set the timer to 20 minutes; press Start. When ready, do а quick pressure release. Place in servingbowls and apply а topping of Greek yogurt before serving.
